Considered the father of Polish Chasidism, Rav Elimelech of Lizhensk (1717-1786) was born to Reb Eliezer Lipa and Mirel. His father, a successful merchant with a charitable hand, was able to trace his lineage to many righteous people from the generations before including Rashi and King David. From a young age, Rav Elimelech and his older brother Rav Zusha (the inspiration for our Smokey Zaatar Herring), studied Torah for hours, everything from the basics to the most mystical of teachings. In their thirties, they began their famous journey wandering around the Polish countryside enlightening the mind and soul of all whom they met. After 8 years of exile, they encountered The Maggid of Mezerich where they joined his inner circle of disciples and absorbed his holy Chasidic teachings. After The Maggid’s passing, Rav Elimelech was crowned his successor and began attracting thousands of Jews from all over Europe to visit and to join Chassidus. Many of his disciples created their own Chasidic courts such as Lublin, Kotzk, Ropshitz and more. Known for his compassion, honesty and scholarship, "The Rebbe Reb Meilich" (as he was affectionately called) became a fountain of Chasidic Torah in the world for generations to come. His magnum opus “Noam Elimelech'' is a collection of his teachings over 22 years. Rav Elimelech’s sweetness balanced with his serious demeanor are the inspiration behind the mellow sweetness and robust flavor of this herring.
